PUMPKIN PIE RECIPE WITH DANI COLDING

Happy November, Friends! Let’s give ourselves a pat on the back for making it through the majority of 2020! At last, the holidays are among us and I hope you all can still create joyous moments and make unforgettable memories with your family this fall and winter season!! My family and I still plan to uphold our holiday traditions like baking, making ornaments, and picking out a real tree, while keeping each other safe. With just two weeks until Thanksgiving, I am thrilled that Fin & Vince gave me the opportunity to share a homemade pumpkin pie recipe! There is nothing quite like a homemade pie for Thanksgiving, plus this one has a graham cracker crust- nom!

INGREDIENTS   

Crust:

1 1/2 cups of crushed cinnamon graham crackers

1/3 cup sugar

6 tablespoons of melted butter

Pie Filling:

2 eggs

1/2 cup sugar

1/2 cup brown sugar

1 can of pumpkin puree

1 12 oz can of evaporated milk

2 teaspoons cinnamon

1 teaspoons nutmeg

1/2 teaspoon cloves

1/2 teaspoon salt

Whipped Cream to Top

STEPS

  1. Preheat the oven to 350 degrees. Combine crust ingredients directly in pie dish, mix well and press into the bottom and sides to cover the pie dish like a crust. Bake the graham cracker crust for 10 minutes (crust should look more firm).
  2. While crust is baking, mix pie filling. Beat 2 eggs with granulated sugar and brown sugar. Then add in pumpkin, evaporated milk, and spices. Whisk until mixture is a smooth liquid.
  3. Turn oven to 400 degrees. Pour mixture into pie crust and bake pie at 400 degrees for the first 15 minutes. Drop temp to 325 degress and bake for 45 minutes.
  4. Let cool on the counter for an hour before cutting.

Additional Notes:
-It may look as if the graham cracker crust is browning or burning on the edges, but it does not taste that way so do not worry.

-If you want to cut out fun shapes or put any saying or message on the pie, take your pie out with 30 minutes left and add the message and place right back in the oven.
